Donut Ingredients:
- 155 g gluten-free 1-to-1 flour
- 80 g powdered sugar
- 4 g (1 tsp) baking powder
- 1 g (¼ tsp) baking soda
- 136 g unsweetened vanilla oat milk
- 10 g corn starch
- 5 g apple cider vinegar
- 45 g yogurt
- 5 g vanilla extract
- 13 g melted butter
Apple Filling:
- ½ apple, peeled, cored and finely chopped
- Pinch cinnamon
- Pinch salt
- 1 tsp lemon juice
- 1/3 cup apple butter
Directions:
- Preheat oven to 350°F and prepare a donut tray by brushing some butter on the inside of the donut molds.
- In a large bowl, combine flour, sugar, baking powder, baking soda and corn starch.
- Into the same bowl, mix in remaining ingredients: oat milk, apple cider vinegar, yogurt, vanilla extract and butter. Form a smooth batter and set aside for 5 minutes.
- In a separate bowl, combine chopped apples, cinnamon, salt and lemon juice and set aside.
- Assemble donuts: Spoon or pipe the batter into donut molds, filling half of each mold. Spoon or pipe one round of apple butter over the donut batter. Add prepared apples alongside the apple butter. Spoon or pipe remaining donut batter over the apple filling closing off the donuts. Overfilling the batter will make the donuts overflow while baking, though they will still taste great!
- Bake for 16 minutes and allow donuts to cool before removing from the donut molds.
